I discovered this noodle while searching for low carb pasta alternatives. I decided to give it a try and created some dishes with it.

This mushroom noodles' texture is gelatin-like but sturdy. It has no distinct flavor, so will pair with anything.

Compared to shirataki or kelp noodles, these mushroom noodles are packed with minerals, fiber and even some protein. They will also hold up if sitting in liquid.

Per 100g

Dietary Fiber: high in fiber to support digestion

Protein: approx. 10g of protein, more than many other mushrooms

Vitamin D: this vitamin is beneficial the immune and musculoskeletal system.

Minerals: Contains calcium, potassium, magnesium, and iron.

Polysaccharides: Polysaccharides have anti-inflammatory and antioxidant benefits.
